TBK cooks- 2 summer salads



As I write this blog at the end of June , July is nearly here when the temperatures rise to 44 degrees ( 50 in August!) and just as the Lockdown may end on 2 July , no one wants to go outside anymore! So I was really pleased when Kuya Patrick sent me this link for 5 summer Salads from his Yacht in Europe!

Five Summer Salads

As some of my readers have the attention span of a goldfish I will share 2 of the salads here and 3 on the next blog.

1. Rainbow fruit salad with honey and lime dressing


Ingredients

500 g strawberries

2 Mangoes

4 kiwis

340 g Blueberries

 2 bananas

2 Limes

2 Tablespoons honey

Method

Wash, peel and dice the fruit ( except the blueberries and limes) and mix in a bowl. Squeeze the juice from the limes, mix with the honey and pour over the fruit in a bowl. Mix the sauce and fruit together . Chill and serve. How easy and refreshing is that on a hot day!

Honestly, Chester, some people are never satisfied!

Seriously it tasted delicious, so much so that on the day I made it I had it for lunch and then as my late Merianda after dinner, and again the next day! So there's enough for 3 fat boys like me or 6 Pinoys! Hopefully my dietary coach in the Philippines, Alex Ginette, will now be satisfied that I am eating enough fruit.

When I was showing the video to Chester he said his favourite fruits were Banana, Pineapple, Berries and Kiwi so I know he will be making this recipe soon !

It was so good that we made it again on Friday and the Friday gang enjoyed tasting it as well


2. Summer Potato salad

Ingredients

2 whole sweetcorn on the cob

1 kg new potatoes ( red if available)

Salt

1 red pepper ( capsicum for my Kabayan)

1 red onion

1 spring onion

1 stick celery

One third of a cup of Dill pickles ( Gherkins or Cornichon in French)

1 teaspoon paprika

Half a cup of low fat mayonnaise

Fresh Dill

Method

Wash and halve and boil the potatoes in the salt and then boil the sweetcorn . Watch the video ( link at the top of the blog) for how to prepare the corn! It uses a new Pinoy technique that I learnt from Jake for when you do not have a chopping board ( and its neat as it stops the corn going everywhere! ). Just remember to let the corn cool down before you shred it so you do not burn your fingers like me!

Next make the sauce by mixing the mayonnaise with the paprika, dill pickle juice and salt and pepper.


Then dice the red pepper, red onion, spring onion and celery and add to the cooled boiled potatoes, shredded corn, sliced pickles and dill . Then place all the ingredients and the dressing in a bowl and mix thoroughly before serving- like so
