TBK cooks - 2 more summer salads

  

In this blog I will share two more summer salads from the video that Patrick sent me. If you missed the other two , click here 



The Ingredients

For this salad you will need 2 Corn on the cob, 2 cups of Olive Oil, 227 g Cooked pasta , one and a half cups of Coriander ( Cilantro) , 1 clove of Garlic, half a teaspoon of chili powder, salt and pepper, three tablespoons of lime juice, two teaspoons of Honey, 2 cups of Cherry tomatoes, One Avocado and half a cup of red onion.


The Method

Cook the two corn on the cob in the microwave for 7 minutes and then grill or cook on a griddle or frying pan for a few minutes having covered them in Olive Oil , turning regularly until they start to brown. Use a cloth when you take them from the Microwave and tongs to turn them so you do not burn your hands!

                              Microwave the corn on the cob for 7 minutes


          Then cover with Olive Oil and cook , turning, regularly, until it goes brown

Weigh out the pasta and cook in hot water and then prepare your dressing. Place the chopped coriander , 1 clove of chopped Garlic, half a teaspoon of chili powder, a little salt and pepper, three tablespoons of lime juice and two teaspoons of Honey into a food processor and blitz it.

When the microwaved and browned corn has cooled shred it into the bowl resting it on an upside down bowl.

                                 

            Rest the bottom of the corn on here ton shred it so it all goes in the bowl

Next place the cold cooked pasta in a bowl with the other ingredients, including the shredded corn, stir and mix in the dressing.


Finally serve in 4 bowls and taste your salad and dressing


Cucumber, Tomato and Avocado salad

This was probably the simplest and quickest of the 5 salads to make and once again its healthy and perfect for our hot summer here in Bahrain or Dubai!



Ingredients

Olive oil, Lemon, cucumber, 3 avocadoes, Red Onion, 4 tomatoes, Coriander ( cilantro) , salt and pepper





Method

Slice the cucumber and onion and place in a bowl with the tomatoes and avocadoes which should be cut into 8 pieces each. Then chop the cilantro / Coriander and sprinkle over the salad with salt and freshly ground pepper. 



Squeeze the juice of one lemon over the salad and drizzle a little Olive oil then mix it all together and refrigerate. 


I managed to get one Big British bowl ( for one big British guy) full of this delicious salad , and 3  smaller bowls for my Kabayan!

The tasting verdict was:

BONGGA!
